Beef shin is a cut taken from the lower leg of the cow. It's a hardworking muscle, resulting in a flavourful beef cut that becomes incredibly tender when cooked slowly. The removal of the bone makes it more convenient for cooking and reduces preparation time. It's a popular choice for dishes that require long cooking times to achieve the desired tenderness.
The beef is from UK Beef cattle, grass-fed and naturally raised on farms recognised for high standards of animal welfare. Your order is prepared here in Linlithgow by our skilled butchers and delivered to your door fresh, so you can choose between freezing or consuming within a few days.
A boneless beef shin is best suited for slow-cooking methods; it’s a classic choice for beef stews, providing rich flavour and tender meat. Braising the shin in liquid creates a melt-in-your-mouth texture and intense flavour, while using a slow cooker or pressure cooker yields incredibly tender and tasty results. Slow-cooked shin can be shredded and used for pulled beef sandwiches or tacos.
Refrigerate your beef shin promptly upon arrival. For optimal freshness, use it within 6 days. If you're not planning to cook it within that timeframe, you can freeze it for up to 2-3 months.

All raw meat products must be cooked thoroughly until they are piping hot.
Your meat order is kept cool in transit because we either use an insulated expanded polystyrene box, or a recyclable tough corrugated cardboard box which is foil lined and insulated with bubble wrap. Both boxes are leak-proof and sturdy.
To keep your delivery cool, it is packed along with specially designed ice packs. Our ice packs are made with a frozen water-based gel, which keeps the meat at the correct temperature for up to 48 hours. When the ice does melt, it stays as a gel, which prevents the delivery becoming wet.
