Beef braising steak is a hearty, flavoursome meat, best for classic slow-cooked casseroles and stews. Braising steak is made for hearty winter meals with long cooking times.
Braising steak is from the supportive neck muscles of the cow. They’re strong muscles with a large amount of connective tissue, meat and fat, so slow cooking maximises the flavour and texture.
Our beef braising steak is sourced from Prime Scotch Beef, naturally reared and predominantly grass-fed in Scotland. All our fresh meat is prepared to order by our butchers here in Linlithgow.

Start by letting your braising steak reach room temperature. Then, in a frying pan with oil, sear the meat at a high heat.
Once nicely browned, transfer your steak to the oven in a casserole dih or slow cooker.
For both the oven and slow cooker, it’s best to cut into 1-inch chunks.
Then, cook your braising steak in a casserole at around 160°C for a couple of hours. For the slow cooker, cook on low for around 8 hours, medium for 6 and high for 4 hours. The longer the cooking time, the nicer the texture, so low and slow is best.
Yes, however, it’s not the best cooking method for braising steak. You can start by frying the steaks before cooking at a low temperature for a long period in an oven or slow cooker.

All raw meat products must be cooked thoroughly until they are piping hot.
Your meat order is kept cool in transit because we either use an insulated expanded polystyrene box, or a recyclable tough corrugated cardboard box which is foil lined and insulated with bubble wrap. Both boxes are leak-proof and sturdy.
To keep your delivery cool, it is packed along with specially designed ice packs. Our ice packs are made with a frozen water-based gel, which keeps the meat at the correct temperature for up to 48 hours. When the ice does melt, it stays as a gel, which prevents the delivery becoming wet.
