Most salmon farms in the UK are located in the Highlands and Islands of Scotland, because Salmon will only thrive in a fresh, clean environment. We choose fish from farms using low-volume and sustainable rearing methods with higher welfare standards and lower impact on the environment.
The best way to cook a side of salmon is to roast it in the oven. Place the fish skin-side down on a baking tray that’s covered in foil or baking paper.
Preheat your oven to 200°C. Whilst heating, pat the fish dry with kitchen roll and lightly drizzle with oil. Make sure it’s properly covered before seasoning with sea salt and cracked black pepper. You can also add a squeeze of lemon juice to enhance the flavour.
Once the oven has reached 200°C, roast your side of salmon for 18 to 22 minutes.
The best way to tell if your side of salmon is cooked is to see if a fork will easily go through the thickest part of the fish. Twist the fork and make sure the fish flakes away.
The side of salmon should go from shiny pink to an opaque pink that’s much lighter. There may also be some albumin, a milky white protein that’s produced in cooking.
A side of salmon has a light yet flavoursome taste and delicate texture. This means salmon is a versatile protein that works well with the likes of pasta and rice, potatoes and some simple veggies.
Asparagus, green beans, broccoli and spinach are delicious, healthy side dishes to salmon.
In terms of flavours, for a light summer meal, the likes of lemon, dill and mint are great options. For Asian-inspired meals, ginger, garlic, sesame and soy sauce are great options. You could also use a light mustard, honey or butter.

All raw fish products must be cooked thoroughly until they are piping hot.
Your meat order is kept cool in transit because we either use an insulated expanded polystyrene box, or a recyclable tough corrugated cardboard box which is foil lined and insulated with bubble wrap. Both boxes are leak-proof and sturdy.
To keep your delivery cool, it is packed along with specially designed ice packs. Our ice packs are made with a frozen water-based gel, which keeps the meat at the correct temperature for up to 48 hours. When the ice does melt, it stays as a gel, which prevents the delivery becoming wet.
